MANGO CHUTNEY
 
You have never eaten a mango chutney like this! It’s fresh, spicy, and a beautiful bright gold color. The microwave seems to make this possible. Try making this — it takes less than 10 minutes. You’ll never go back to the jars.
 
1Mango (10-12 ounces)>Peel, half & seed Mango. Cut into ½ in. cubes.
 
½CSugar>Combine with Mango & stir to mix thoroughly. Cook uncovered on high for 7 minutes.
¼CRed Onion (finely chopped)
2TWhite Vinegar
2TGreen Bell Pepper (finely chopped)
1TFresh Ginger (grated)
½tGround Ginger
tGround Turmeric
tGround Cloves
Freshly ground Black Pepper
 
Allow the Chutney to cool slightly; then cover tightly and refrigerate. It will keep for 1 week in the refrigerator.
